If you follow our instagram feed (alittlebirdcom) you’ll know that food and gardens come high on our things-we-love list. And we’re always raving about Petersham Nurseries (read about its great workshop programme here), so when we were invited to spend a day behind the scenes, prepping and cooking at the Michelin starred Café, we jumped at the chance. It was, as we’d hoped, a totally wonderful experience. Head chef Damian Clisby likes having the odd stranger asking questions and needing instruction in his small but busy kitchen because it focuses his team in a certain way, and so he’s issued an invitation to anyone who’d like the chance, to join his staff for a day. You really do become part of the team, being given tasks which get more and more challenging as the day goes on, and you learn so much. We picked edible flowers (pictured below) from the stupendous kitchen garden (which is closed off to the general public), helped make a delicious asparagus starter, finally mastered zucchini fritti, and were taught how to make tempura batter, pickled vegetables, and prosecco jelly— and that was just a fraction of what we observed, tasted and learned as the day went on. And though you do work hard (though not as hard as the chefs!), the day is strangely relaxing because you are entirely preoccupied with what you are doing without having any real responsibility or stress. We loved it and would like to do it at least once a season.
