Lion/ne Skin Sessions

How’s your wash bag looking? Having all but given up on any sort of beauty routine during lockdown, ours is in need of a refresh. Enter Lion/ne, a brilliant new company that sits somewhere between the beauty counter and the dermatologist. They offer 1:1 consultations via zoom with trained Skin Mentors who really know their stuff and will tailor a complete skincare regime to your individual needs. Crucially, they aren’t affiliated to any particular company so they recommend the products that really work from a broad spectrum of brands at different price points.

We tried out one of their ‘Holistic Skin Sessions’ and were very impressed. We showed up not wearing any make up, having submitted a pretty thorough form in advance answering questions about lifestyle/diet/hero products etc. You then talk through your concerns – it’s the chance to ask anything from how to include an SPF without causing break-outs to how to avoid waking up with puffy eyes. The skin mentors are not doctors, so it’s not the place for more serious skin concerns or conditions, but if you’re wondering how to brighten your complexion, which cleanser to use, how to deal with mask-acne and a whole range of issues, then it’s a unique chance to do that with a knowledgable expert.

After the session you receive a bespoke skin profile, a new regime with products (out with the La Roche-Posay Gel Moussant cleanser I’ve been using for years and in with the cleverer PHA cleanser, NeoStrata Restore) as well as a a calendar telling you when to put on what, and in what order. There’s also a shopping cart of products, but you’re under no obligation to buy any of these unless you want to. Afterwards you have access to a chat service with your skin mentor for up to 30 days or until your next consultation. Despite being conducted via zoom, the service feels very personal and almost like talking to a knowledgeable friend. Cornwall’s immersive Rogue Theatre comes to London

Anywhere on the tube line counts as London, right? Take the Jubilee line all the way to its final stop of Stanmore and from there it’s a 3 mile Uber to At Home Farm in Hertfordshire’s leafy Green Belt. Here in private woodlands Cornwall’s award-winning Rogue Theatre will be setting up camp for just two days at the end of July bringing with them their new show, Along the Wild Path. This will be a collection of some of Rogue’s favourite tales told in the immersive story-world by the Wild King and The Moon. Billed as ‘the theatre you want to take your children to’ the show works for all ages from 3-4+ to teens but as a bonus, adults will enjoy it too. The theatre company usually perform at Tehidy Woods between St Agnes and St Ives, so it’s a rare chance to experience the show outside of Cornwall. Walk along the Wild Path and discover the pair of fishermen who haul in a catch of singing mermaids and the goblin who lives in the dark underland but meets a fairy on his way. Expect live music, dance and original stories. The shows begin at 11am and 5pm on Friday 30 July, and 4pm and 7pm on Saturday 31 July and last 1 hour 15 minutes.

Honey & Co BBQ Recipes and Summer School

We’ve slowly been working our way through Honey & Co’s latest cookbook, Chasing Smoke: Cooking over fire around the LevantIt reads in part like a recipe book and in part like a wonderful travel book, and as with everything the Honeys (AKA Sarit Packer and Itamar Srulovich) touch it spills over with love. There are stories from Alexandria in Egypt, Amman in Jordan, Acre in Israel, Adana in Turkey and Thessaloniki in Greece as well as recipes gathered and inspired by each place. The Middle Eastern flavours make for perfect heatwave cooking whether you’re a BBQ fanatic or a novice. Speaking of which, Honey & Co are launching a back-to-basics Summer School this August where a new topic will be covered every Wednesday. Tahini BBQ lamb chops with fresh plums and spiced plum sauce

If you can, buy nicely trimmed lamb racks without too much of a fat cap, so that you don’t need to worry about rendering fat off them before dividing into individual chops. Be forewarned, though: there will be a fair amount of smoke while cooking these, so they are best grilled outside. We use tahini in a few different versions of BBQ sauce, as the sesame paste lends itself so well to roasted meats, adding a rich nutty note. Here we include anchovies for a savoury touch and pomegranate molasses for sweetness.

The accompanying plum sauce is like a chutney or Chinese plum sauce, with its sweet, sour and spicy flavours. It partners perfectly with these rich BBQ chops, and also works amazingly with a simple roast chicken or duck. The BBQ and plum sauces can either be made shortly before grilling the chops, or up to a couple of days in advance.

2 racks of lamb, divided into 12–14 single chops 100 g / 31⁄2 oz baby red chard (or lamb’s lettuce 4 plums, halved and stones removed)

A feast for 4–6

For the tahini BBQ sauce

150 g / 51⁄4 oz tahini paste
1 clove of garlic, peeled and minced
2 salted anchovies, chopped
1 tsp pul biber chilli flakes (or Allepo)
2 tbsp pomegranate molasses
100 ml / 31⁄2 fl oz water, plus more if needed 1 tsp flaky sea salt

For the spiced plum sauce

6 plums, cut into eighths and stones removed
50 g / 13⁄4 oz sugar
1 clove of garlic
1 whole dried chilli, cracked in half and seeds shaken out
1 tsp Szechuan pepper
1 bay leaf
3 tbsp pomegranate molasses 1⁄2 tsp flaky sea salt
1 tbsp red wine vinegar

Use a stick blender or a small food processor to blitz the BBQ sauce ingredients to a smooth, thick paste. You may need to add a little more water to reach the desired custard- like consistency, depending on the variety of tahini. You can use the BBQ sauce straight away or keep it in the fridge for a day or two until needed.

Put the plum wedges, sugar, garlic, spices, bay leaf and pomegranate molasses in a small frying pan, place over a high heat and bring to the boil. Cook for 5 minutes until the plums soften and start falling apart, then remove from the heat and stir in the salt and vinegar. You can use this straight away, or cool and store in the fridge for a few days.

When you are ready to cook, brush half of the BBQ sauce over the chops, coating both sides. You will need the rest of the BBQ sauce to brush on the chops as they grill. Place the chops one by one on the rack above a hot BBQ. Grill for 2 minutes, then turn them over and brush with some more sauce. Grill for another 2 minutes before turning them back over and basting again. Repeat the grill-turn-baste process until the chops have cooked for a total of 6 minutes on each side. Remove to a serving platter with the baby chard spread over it.

Pop the plum halves on the BBQ, cut-side down. Grill for a minute or so just to warm a little, then add to the platter with the chops. Serve with the plum sauce on the side.

To cook without a BBQ

Use a lightly oiled, preheated griddle pan on your stove and cook just as you would on the fire. But have your extractor fan on full blast, as it will get very smoky!

Tuna shish with chermoula and preserved lemons

Makes 4 skewers – allow 2 per person for a meal

Tuna is a very robust fish so it cooks beautifully on a BBQ, it retains flavour and moisture and the slight smoke works so well with the oiliness of the fish. The chermoula paste is a spicy lemony number that adds real zing – it will keep well in your fridge for a few days, so if there is any left over or you are inclined to double the amount you make, it will work well in a tinned tuna salad or in a sandwich with salted or cured beef. Serve the shish with baked potatoes for a hearty meal.

2 good quality, thick tuna steaks (about 400 g / 14 oz in total)
a drizzle of olive oil, for brushing
flaky sea salt
freshly ground black pepper
juice of half a lemon

For the chermoula

2 preserved lemons, skin only (pulp and seeds removed)
1 clove of garlic
1⁄2 red chilli
1 bunch of coriander, top part only
1⁄2 bunch of parsley, leaves picked
freshly ground black pepper
1⁄2 tsp ground coriander
about 50 ml / 13⁄4 fl oz olive oil

We like to make this chermoula by hand, chopping everything until very fine, then mixing it with the oil in a small bowl. You could use a pestle and mortar instead to pound the ingredients, in which case add the oil at the end once everything else is well-combined.

Cut each tuna steak into four large cubes and thread two on each skewer. Brush well with olive oil, sprinkle with salt and pepper, and place on a very hot grill to cook and char nice lines. Turn the skewers after a minute and repeat twice more to char the tuna cubes for a minute on each side. We rather like the interior a little raw, but if you don’t, simply cook for 30 seconds more on each side. Remove from the grill, douse with the lemon juice, then top with the chermoula.

To cook without a BBQ

Use a lightly oiled, preheated griddle pan on your stove and cook just as you would on the fire. Or you could simply use a non-stick frying pan.

Whole baked red onions with  sage, honey and walnut dressing

Serves 6–8 as a starter or side salad

4 large red onions, skin on olive oil for brushing
flaky sea salt, to finish

For the dressing

80 g / 23⁄4 oz walnuts
10 sage leaves, rolled up and cut into really thin strips 1 tbsp honey
2 tbsp white wine vinegar
2 tbsp boiling water
1 tsp mild chilli flakes
1⁄2 tsp salt
a little freshly ground black pepper
3 tbsp olive oil
a few sprigs of mint, leaves picked (about 15 g/ 1⁄2 oz)

Halve the red onions through the core, keeping the skin on. Brush the cut faces with oil and place cut-side down on a hot grill. Roast for about 12 minutes till the cut surface is black and charred, then flip to skin-side down and leave to cook for 5 minutes more. Remove to a plate to chill till they are cool enough to handle.

Make the dressing while you wait. Roast the walnuts over the fire for about 8 minutes in an old sieve or dry frying pan, stirring occasionally. Slightly crush them and mix with all the other dressing ingredients apart from the mint leaves.

Break the cooled onion halves into petals, discarding the outer skins. Set the petals with their charred rims upwards on a large serving plate. Just before serving, thinly shred the mint leaves and mix into the dressing. Drizzle all over the onion petals and sprinkle with a little sea salt to finish.

To cook without a BBQ

Use a lightly oiled, preheated griddle pan on your stove top and cook just as you would on the fire, but beware, your house will get pretty smoky!

Basics: The White Shirt

What’s the most memorable project you’ve worked on?

A stunning wedding in Sardinia, with an incredible wedding planner and gorgeous clients.  The surrounding landscape was breath-taking and played a large part in the designs.  It was serious hard work, with months of planning; the result though was wonderful and created some brilliant memories.

Do you have any advice for those who dream of a career in floristry?

I have built my business from my kitchen table to a globally recognised brand; in addition to creative talent and a love for flowers and design, you need to be determined to succeed, set yourself big goals, work really hard, push boundaries, persist when people say no and become an expert problem solver. It looks pretty and lovely on the outside but floristry is tough. It can give you a hugely rewarding career with many opportunities, if you want it enough.  Our free Seasonal Mini Courses and our Floristry Fundamentals Masterclass (which launches once a year) are great places to start!

How did the online courses come about? 

We first launched our online courses in 2018, they came as a result of the success our studio based Flower School in London – each time we released a course date, it would quickly sell out, with students joining us from all over the world.  I wanted to be able to reach more people and ensure they were easily accessible.  They have become my main focus.

Where did you spend lockdown? 

I spent lockdown with my family in our home in Dorset. For me 2021 was due to be a year of travelling the world with work, talks, demonstrations and events scheduled in Sydney, Boston, New York, San Francisco, LA and Venice. My weeks between would have been spent travelling between London and the countryside.  I was incredibly fortunate as lockdown gave me an opportunity and time to be still and appreciate the beautiful countryside surrounding our home and the coast close by.

How did you occupy yourself with so many events cancelled?

I used the time to create free tutorials, in the hope of inspiring others to find the same enjoyment and mindful creativity as I do in floristry. My team and I also created a way of linking flower growers with florists around the world, to help ensure flowers didn’t go to waste and people had easy access to flowers to create and design.

Could you tell us about your gold award-winning window for The White Company?

Yes, we designed and created a window display for The White Company as part of Chelsea in Bloom that runs alongside Chelsea Flower Show. It was a brilliantly challenging brief, to combine the aesthetics of their clean and beautiful brand, with the Floral Safari theme of the event and with a design to last for five days in the heat of the summer.  We installed an entire camp within the window and out onto the pavement, with a mass of different grasses inspired by the Sahara Desert, all of which we chose to dry naturally over the days, with the overall design evolving each day as a result.

What’s your workwear style?

On site for clients, as a team, we wear smart, practical and black with branded gilets. In the studio I wear anything from jeans to dresses.

Any top tips for getting cut flowers to look beautiful?

We are launching a free Summer Mini Course on 24 July, which will give everyone plenty of ideas to help you create beautiful summer flowers.  Over three tutorials, you’ll learn how to care for delicate summer flowers, how to utilise vessels in your home and how to create the perfect table design using your newfound skills.

My inspiration comes from the surrounding landscape, the architectural details of the venue where I am working as well as directly from my clients, depending on their personalities and the theme of the event. I also look to current fashion and the arts in general for wider inspiration.

Which flowers are you happiest to receive?

My favourite is always a handful of home grown stems. 

What’s your favourite flower?

I love beautiful, delicate and also wild rambling, summer stems – particular favourites are Orlaya and Honeysuckle.

Any future projects in the pipeline? 

In addition to our online Design Masterclasses hosted throughout the year, we are launching an online interactive Business Course.  I am really excited about it! I created my business from scratch, with no prior floristry or business experience and I want to share everything I know about creating and growing a floristry business, with florists who are ambitious for themselves and who want to grow successful, sustainable businesses.  The course is for those who are ready to work hard and who want a very safe pair of hands to guide them and give them confidence. 

Favourite space in London? 

The Victoria and Albert Museum. It was the first London venue to appoint me onto its preferred supplier list for flowers at its events.  I’m awed by its scale, the quietness of the huge spaces and the extraordinary curated mix of design.
